I can understand the significance of the Shoria representing the womb of the Holy Virgin St. Mary, but how come in the Divine Liturgy, Abouna adds incense to the Shoria, when mentioning the names of the departed?

What is the connection between St. Mary's womb and the names of the departed?

Yes the Shoria actually has two parts.

The bottom half represents the Womb of St Mary in that we place live coal in it. The live coal represents Christ's divinity which dwelt in the flesh of St Mary.

The top half of the Shoria represents Heaven, and by placing incense (which represents our prayers) onto the coals (though Christ) ours prayers reach Heaven. So this doesn't prevent us from using it to raise incense which represents our prayers being raised to heaven as is mentioned in Rev 5: 8 and 8: 3, 4.
